best breakfast ever: banana bread oatmeal


Don't you love it when food is yummy and good for you?

This banana bread oatmeal is a great way to start the day. Just top your bowl of steel cut oats with sliced bananas, some pecans, and a drizzle of maple syrup. It tastes exactly like banana bread-- cross my heart and hope to die.

Here's my recipe for Easy Steel Cut Oatmeal:

1 cup steel cut oats
4 cups water
salt to taste

Combine oats and water in a medium pot. Let soak overnight. In the morning, cook over medium low heat until thick and creamy, about 20 minutes. Add salt to taste before serving.

Double or triple this recipe for lots of leftovers. This way, you can make a big batch on Monday and refrigerate the leftovers--and you've got instant oatmeal for the rest of the week.

P.S. look for your steel cut oats in the bulk section-- they'll be a lot fresher and far less expensive than the tinned stuff you find on the shelf

In trying to simplify meal times around here I decided on oatmeal for breakfast during the week, and waffles on the weekend. And so far the oatmeal has been ill recieved...I'm looking forward to trying your Banana Bread Oatmeal tomorrow! And then maybe later in the week, if I call it Blueberry Muffin Oatmeal, my sweet kids will enjoy the blueberries I have waiting in the fridge...
