kale chips: crave-worthy


I've never been able to eat health food that doesn't taste good. I just can't. If it doesn't look, smell, and taste delectable, I can't even go there. (luckily for all of us, there are lots of healthy and yummy ways to prepare food)

So although I've seen recipes for kale chips popping up here and there around the blogosphere, I ignored them, thinking "Sure they might be good for me, but blech."

But a couple of weeks ago a bunch of kale showed up in our co-op basket, and not knowing quite what else to do with it, I baked up a pan of kale chips. Now, I don't know if this is a pregnancy thing or what, but I just can't get enough of them. I'm buying kale a couple of times a week now, just to turn them into chips, and eating an entire bunch at a time, all by myself. So much for blech...

They're so easy! Just toss torn kale leaves with a little olive oil and kosher salt and bake. Recipe here.

my sister-in-law made some kale chips at said they were amazing. i'll have to try it!

I was never much interested in Kale before but recently since trying green smoothies (greensmoothiegirl.com) I have developed a taste for kale. not like I just pull it out and eat it,..but I really like having it in my smoothies and feel better when I have it. I think the part of pregnancy thing that craves kale is that it is fresh greens. I've noticed that being pregnant I couldn't get enough of raw fresh foods (except carrots..i guess for whatever reason maybe they take too long to digest, carrots would turn my stomach every time).
