Dangerous Brownies

I'm probably doing a disservice to mankind in sharing this recipe, but what the heck!

When, pray tell, can a recipe be dangerous?

When it's a recipe for rich, dark, sinful brownies that can be on your fork only 10 minutes after your chocolate craving strikes. Did you hear that people?! TEN MINUTES!!

And not only are these suckers lightening fast to whip up, but in rigorous taste tests, they beat boxed brownie mix brownies hands-down. In other words, all of us at the Snickerdoodle house think they're better.


I was so proud of myself for eating only one modest piece last night before bed(with a scoop of vanilla ice cream- yum!).

But then, I was up 5 times in the middle of the night with sick kids (nasty head colds and pink eye), and I got in the habit of snatching a couple of bites of brownie on my way back to bed.

You know, to reward myself for being such a caring and selfless mother.

By the time I woke up this morning I'd eaten two thirds of the pan! (truthfully, I think Mr. Snickerdoodle may have helped-- he was up with the sick kiddies too)

Anyways, what I'm trying to tell you, is that if you have self control issues around desserts (like myself), I am not responsible for what this recipe might do to you.


And without further ado:

Microwave Brownies (courtesy of The Best Quick Recipe-- you need this cookbook)

3 large eggs

1 1/2 c. sugar

8 Tbsp. melted butter

3/4 c. unbleached all-purpose flour

1 c. cocoa powder

1/8 tsp. salt

1 tsp. vanilla extract

1/3 c. semisweet chocolate morsels

1. Spray an 8 by 8-inch microwave-safe baking dish with nonstick cooking spray.

2. Whisk together the eggs and sugar in a medium bowl. Slowly whisk in the butter. Stir in the flour, cocoa powder, and salt. Stir in the vanilla and chocolate morsels. With a spatula, scrape the batter into the prepared pan.

3. Microwave on high until a toothpick or skewer inserted in the center comes out clean, 5 to 7 minutes. You can tell the brownies need more time in the microwave if, when te pan is tilted, the brownies slouch to the lower side. Cool the brownies for 10 minutes, cut into squares and serve warm. (I rarely bother to let the brownies cool more than a couple of minutes. I just scoop the hot brownies out of the pan and into a bowl, especially if we're having them with ice cream.)

yeah that whole pan would be GONE at my house! Except my husband eats around the edges first! He likes the crust. They look delicious! Sorry about the sick kids! someday we'll get together!

I'm definitely going to try these. I can't even imagine brownies out of the microwave. I shall try it!

The best part of this post though is the fact that you were sneaking into them throughout the night and then admitted it on your blog with a picture. You are woman! Hear you roar! Love it!

Stephanie - thanks for sharing this recipe - it would be great in my new Bakersware pans - the pans are microwave, oven, freezer, and dishwasher safe - and they are not wiggly like silicone. We make a square 'brownie pan' than would be perfect. I'll give your recipe a try in it - you can see the pans at Bakersware.com. PS - I love your blog - great ideas!
