recipe of whenever I get around to it (formerly recipe of the week)

I made a new internet friend in Erin of the blog Sutton Grace and she introduced me to lentil tacos. They're cheap, easy to make, and good for you. What's not to love?

We had them for dinner last night, and while nobody was fooled into thinking that they were ground beef, they were very tasty-- a welcome addition to my collection.

i am so glad that you and your family liked the lentil tacos! i totally agree with you, lentils can't masquerade as a meat, they are just a good alternative.

How lame am I? I make tacos by mixing cooked ground beef with Nacho Cheese soup mix and a package of taco seasoning, and about a half cup of water. The recipe is on the Nacho cheese can. It's one of the only ways I can choke down ground beef and my kids eat it.

I don't have a specific taco seasoning recipe but here is what I do. After cooking the meat (chicken, beef, turkey--whatever) I add something tomato based. (Can be ketchup, plain tomato sauce, tomato paste, crushed tomatoes you get the point, whatever you have around works.) Depending on how liquid/non-liquid your tomato item is you may need to add water. The must have spices for me are black pepper, cumin and some kind of spicy pepper (I use cayenne pepper but chili powder would work too.) You can also add garlic powder or minced garlic, onions, jalapenos or green chilies. Just add and taste until it tastes good to you.

She also has some other creatively healthy recipes. We tried the Greek Quinoa Burgers for the 4th of July and loved them (we like to try unique and interesting, most often FOREIGN, how ironic is that, foods for the 4th. I'm excited to try the lentil tacos... we love lentils. mmmmm! Thanks
