Not to toot my own horn or anything, but I just made (and consumed) a fabulous pizza. I'm already scheming to fit it into our menu again. You could even call this healthy if you put it on whole wheat dough...
1/3 recipe pizza dough
olive oil
1 Roma tomato, sliced
1/2 of an 8 oz. mozzarella ball, sliced
1/3 c. (or so) fresh basil, torn
1 Tbsp. Parmesan cheese
Shape dough into a pizza round. Brush generously with olive oil. Top with mozzarella and tomatoes. Bake in a preheated 500 degree oven for 6-8 minutes, or until cheese is browned and puffy. Remove from oven and sprinkle with basil and Parmesan. Voila!!
